Festive Banana Bread

Reduce food waste by using those overripe bananas! Chunks of chocolate and dried fruit mixed with aromatic spices makes this the perfect treat to make this festive season.
Ingredients
- 4 small or 250g overripe bananas

½ cup or 85g brown sugar
- ¼ cup or 50g flavorless oil (grapeseed, macadamia, or coconut)
- ½ cup or 130g plant milk of choice

½ cup or 85g sultanas or dried cranberries

2 cup or 350g self raising flour
- 110g dark chocolate
- ½ tsp 5g bicarb soda

2 Tbsp or 15g ground cinnamon

1 Tbsp or 8g ground ginger
Directions
- Preheat the oven to 160 degrees celsius.
- In a large mixing bowl, mash the bananas with a fork.
- Add the wet ingredients to the bowl and whisk thoroughly.
- Add the brown sugar and then sift in the flour, bicarb soda and spices. Mix using a spoon until well combined.
- Fold through the chocolate chips and sultanas.
- Pour mixture into a lined loaf tray.
- Bake for 45 minutes or until brown on top. Use a skewer to poke into the loaf to ensure it is cooked in the middle.
Leave on a cooling rack to cool before storing it in a sealed container.
