Black Bean and Mango Salad with Lime and Chilli Dressing
Ingredients:
For the Salad -
160g or 1 cup dried black beans
1 large mango, diced
1 cup fresh tomatoes, diced
½ cup coriander, roughly chopped
For the dressing
60g tahini
1 tsp lime zest
10g lime juice
3g or 1 tsp ground cumin seeds
3g or 1 tsp ground coriander seeds
⅛ tsp cayenne pepper
¼ tsp chilli flakes
1 pinch salt to taste
40g water
Method:
- Cook* black beans and leave to cool.
- Add all of the salad ingredients into a bowl and mix to combine.
- In a separate bowl, whisk the dressing ingredients.
- Pour the dressing onto the salad when you are ready to serve it.
