Black Bean and Mango Salad with a Lime and Chilli Dressing

Ingredients
- 160g or 1 cup dried black beans
- 1 large mango, diced
- 1 cup fresh tomatoes, diced
- ½ cup coriander, roughly chopped
- 60g tahini
- 1 tsp lime zest
- 10g lime juice

3g or 1 tsp ground cumin seeds

3g or 1 tsp ground coriander seeds

⅛ tsp cayenne pepper
- ¼ tsp chilli flakes
- 1 pinch salt to taste
- 40g water

Directions
- Cook* black beans and leave to cool.
- Add all of the salad ingredients into a bowl and mix to combine.
- In a separate bowl, whisk the dressing ingredients.
- Pour the dressing onto the salad when you are ready to serve it.
Recipe Note
*Cook black beans by either simmering black beans in a saucepan for 1-2 hours (time dependent on whether or not you soaked the black beans beforehand), or cooking in a pressure cooker for 12 minutes.
